Dr. Chef Varinder Singh Rana

Dr. Varinder Singh Rana is the Dean of the School of Hotel Management, Airlines, and Tourism at CT University, Ludhiana. He holds a Ph.D. in Hospitality from Amity University, Noida, and a postgraduate degree in Hotel Management from St. Peter’s University, Chennai. With over 19 years of experience in academia and the hospitality industry, he has contributed to institutions like GNA University, Lovely Professional University, and Punjab Tourism Development Corporation. Dr. Rana has achieved seven Limca Records and serves as the General Secretary of the Chefs Association of Five Rivers, a nodal body of the Indian Federation of Culinary Associations (IFCA). He has authored 12 books and 22 research papers and has served as a chef for the Presidents of India and Afghanistan. As a certified Master Trainer of the Food Safety and Standards Authority of India, he has received multiple accolades, including the Best Culinary Educator Award by IFCA.

His achievements include representing Punjab at Republic Day celebrations and winning international culinary medals for India. He has also served as a jury member for national and international culinary events and initiated a bakery unit at Central Jail, Ludhiana, recognized by the Punjab Tourism Minister.

Arun Mathur is the Executive Chef at Trident, Gurgaon, managing the award-winning restaurants Cilantro, Saffron, and Konomi. With over two decades of culinary experience, he has worked with renowned hospitality brands, including The Oberoi and InterContinental.

He began his career as a Management Trainee at The Park Hotel, New Delhi, in 1997 before moving to InterContinental Park Royal. At The Oberoi, New Delhi, he became the Sous Chef and head of Kandahar, the Indian specialty restaurant. During his 14-year tenure, he led multiple food outlets and trained in London at Michelin-starred Trinity Clapham under Chef Adam Byatt. He also worked with Chef John Williams at The Ritz London.

Arun has cooked for global icons like Warren Buffett, Bill & Melinda Gates, and Lakshmi Mittal. He managed prestigious events, including Isha Ambani’s wedding, the Audi Bayern Munich team’s catering, and weddings for industry leaders like Sunil Bharti Mittal and HCL’s founder.

A 2016 CEO Award nominee at Oberoi Hotels, he was part of the Indian President’s delegation to Mauritius. Committed to inclusivity, he aims to increase women chefs and differently-abled professionals in the culinary industry while promoting India’s rich gastronomic legacy worldwide.

Ashish Chopra is a renowned culinary historian, author, and television host who left his role as Executive Director of the Institute for Environmental Management and Social Development to pursue his passion for food and travel. With expertise in conflict management, he has served as an advisor to the Governor of Mizoram and Assam Rifles. Dedicated to preserving ancient culinary traditions, he founded the School of Ancient Culinary Arts (SACA). He has been a Senior Consulting Editor for Food & Beverage Buzz magazine and has contributed to Exotica, Inside Outside, The Pioneer, Condé Nast Traveler, and Lonely Planet. He also writes a weekly column for Dainik Bhaskar.

A recipient of the Rex Karmaveer Global Fellowship (2013) and nominee for the Karmaveer Jyoti Puraskar (2019), Ashish has organized heritage food festivals with Radisson Blu, Park Plaza, and ITC Hotels. He has documented tribal cuisines and co-authored books on royal culinary traditions.

His expertise extends to consulting for Gordon Ramsay’s Great Escapes, National Geographic, BBC, and Travel XP. Currently, he serves as the Principal Culinary Advisor for BeatO and Chairperson of the Culinary Development Committee of Diabetes India, furthering his influence in food and health.
